from olive storage to separation within 24 hours

The quality of our olive oil begins with prompt, careful processing. That is why olives delivered to Oleificio Cimini are processed within 24 hours of harvesting, helping to preserve their freshness, aromas and sensory characteristics.

Every stage is carefully overseen: from receiving the olives and removing the leaves to washing, crushing, extraction and storage.

Olive oil-making tradition and modern technology

An honest olive oil, rooted in the land, family and olive oil-making tradition of Paglieta

Oleificio Cimini combines the tradition of a family-run olive oil mill with modern olive-processing technology. Each stage is monitored to respect the raw ingredients, shorten processing times and produce clean, balanced and stable extra virgin olive oil.

Artisanal expertise guides our everyday decisions, while innovation enables greater precision, safety and attention to the quality of the finished product.

Expertise, meticulous control and passion come together to make the most of every harvest.

More than olive oil: another valuable resource!

Olive processing also produces olive stone granules, a natural biomass made from the woody part of the olive pit that can be used as fuel in suitable heating systems.

Recovering this by-product allows Oleificio Cimini to reduce waste and transform what remains of the olives into a useful new resource, putting the principles of the circular economy into practice.

Production process

from olive storage to separation within 24 hours

The quality of our olive oil begins with prompt, careful processing. That is why olives delivered to Oleificio Cimini are processed within 24 hours of harvesting, helping to preserve their freshness, aromas and sensory characteristics.

Every stage is carefully overseen: from receiving the olives and removing the leaves to washing, crushing, extraction and storage.

1. Olive reception

After harvesting, the olives are delivered to the mill and handled with care to keep the fruit intact, healthy and ready for processing.

2. Leaf removal and washing

Leaves, soil and impurities are removed before processing. The olives are then washed with drinking-quality water to prepare them for the next stages.

3. Crushing

Crushing breaks down the olives into a paste, releasing aromas and natural compounds that are essential to the quality of the oil.

4. Controlled malaxation

The olive paste is gently mixed under controlled time and temperature conditions to facilitate oil extraction while preserving its properties.

5. Cold extraction

The oil is carefully separated from the solid and watery components in a process designed to preserve its aromas, balance and quality.

6. Olive oil storage

After extraction, the olive oil is stored under suitable conditions, protected from light, heat and oxygen to maintain its characteristics.

Social and environmental responsibility

Oleificio Cimini’s connection to its local area goes beyond olive oil production: it also extends to social, educational and environmental initiatives.

The company encourages a greater awareness of olive oil, strengthens its relationship with the local community and adopts practices that respect the environment and natural resources.

Guided tours, educational activities with schools, recyclable packaging and the recovery of processing by-products are all part of our ongoing commitment.

environmental responsibility

The company uses 100% recyclable packaging and low-environmental-impact machinery, including electric forklifts and latest-generation dryers.

In compliance with legal limits, olive mill wastewater is reused as a natural fertiliser, while olive pomace is converted into biofuel for on-site energy production, thereby reducing waste.

Particular attention is also paid to waste sorting and the sustainable management of resources.

social responsibility

Every year, Oleificio Cimini allocates part of its revenue to charitable initiatives and serves as the sole supplier of extra virgin olive oil to local nursery schools.

The company also promotes food education through guided visits for students and actively supports local cultural events, associations and sporting activities.

The photovoltaic system enables Oleificio Cimini to integrate renewable energy into its mill operations, reducing the environmental impact of production. This is a tangible commitment to sustainability, energy efficiency and protecting the local area, bringing together olive oil-making tradition and a more responsible approach to producing extra virgin olive oil.
